All-purpose quiche is really just a formula
My all-purpose “everyday” quiche is really just a formula. (As opposed to the classic French custard quiche found in today’s Desperation Dinners column, click here for that recipe,) It’s built around a ratio of eggs to cream, with a lot of cheese and a few vegetables and perhaps meat thrown in for flavor.
Our Desperation Entertaining cookbook has two quiche recipes, a mushroom one and one with broccoli. (Click here for that recipe.) The recipes are essentially the same except for the combination of cheese and the different add-ins.
How do I decide?
A lot of times what ends up in my quiche depends on what’s left over in my refrigerator and what’s in my pantry. I’ve added everything from roasted red peppers to sliced tomatoes to chopped ham and bacon bits.
When I make quiche I usually do two – partly because that’s how many pie crusts come in a package, but also because the second, extra one freezes beautifully for months. It really is just as easy to make two as it is to make one.

Mmm, sounds so good. I was watching Paula Deen yesterday and she made her quiche crust out of refrigerated hash browns. Pressed them into a pie plate, baked then filled it. Thought that was a great idea.

I plan to make your quiche for our Christmas eve dinner with family. I have both Desperation Dinners - it got me through cooking when I had babies and toddlers - and Desperation Entertaining. I love your cookbooks and they are my go-to sources for cooking and entertaining when I don’t have a lot of time. Your minestrone recipe is my favorite lunch entree!
Thanks - I’ve been looking for a good quiche recipe & I know that any you put forth will be! One Q though - my computer seems to get hung up whenever I try to print your recipes. I’ve had to resort to copying & pasting to a Word document to keep from crashing. Any ideas?
The hash brown crust does sound like a fun idea! Also, Maria, thanks for the kind words about our books.
As for the printing, I just tested it and it worked fine for me, so not sure what the problem might be. There are 3 print choices, try the “compact” version!
