Ciabiatta with Chicken and Cheese: A sandwich you could fall in love with
True confessions time: I don’t really love sandwiches. Especially not for dinner. Why that’s true, I’m not able to succinctly pin down, but I think part of it involves temperature and the fact that it’s food you pick up with your hands. To me, I guess dinner just means hot food and a fork.
Then there’s the matter of the bread. For most of my life, sandwiches revolved around fluffy bread that pretty much stuck to the roof of my mouth – getting in the way of the chewing process. All of a sudden I can’t talk or swallow and a certain degree of panic sets in.
Well, now that I’m cooking for two most nights, I’ve come to a point where I’m ready to get over it and get on with it. Common sense tells me that sandwiches are a great meal for Empty Nesters because you can construct them quickly, usually without dirtying pots and pans. Easy fix, easy clean – great for a small household.
As for the matter of the bread, Alicia convinced me to try this recipe for Ciabatta Chicken Cheese Sandwiches. It’s built around a sturdy bun that’s guaranteed not to disintegrate or glue to the roof of your mouth. She’s right. These sandwiches are terrific.

Strange food phobias or semi-irrational culinary avoidances?! Oh dear, I’m listing a couple, all courtesy of my husband.
Husband—-
-doesn’t think soup is quite a meal so on nights when soup is on the menu, I will sometimes make a hearty sandwich (thanks for the ciabatta and chicken sandwich recipe) or I’ll add a couple slices of a hearty bread to his plate to round out his meal.
-doesn’t think breakfast food being served for dinner is quite right. He won’t complain though as that’ll mean he is on his own if he wants dinner, and he knows that.
-doesn’t like cooked fruits of any kind, so no cobblers, fruit pies, etc for him. He has explained that it reminds of being a small child and having to eat his aunt’s stewed prunes for breakfast. How he can equate a yummy, warm peach cobbler and stewed prunes is well, beyond me. Anyway, on the rare occasion that I’ve made a fruit cobbler or something similar for a family dinner, I quietly take a couple of Oreos and serve that to him as his dessert instead. He is quite happy.
LOL! My hubby refuses to eat beets because his Mom hated them. She hated them because her father worked in sugar beets (I know I’m getting this a bit wrong). Anyway I adore beets and almost never cook them!

It’s true that this isn’t the most healthy of all meals you could eat! Tips: Leave out the cheese and eat it open-face with only 1 slice of the bread!
