When its 95 outside and the heat index makes it feel like 105, a steamy bowl of soup is the last thing I want for dinner. But soup is not completely out of the question - just make it cold.
Our recipe for Classic Gazpacho is so easy, you can make just 20 minutes before dinner or in the morning before you head off for the day and leave it in the frig to chill.

I don't know about cold soup, it just doesn't feel right when it hits your lips! My mouth can't get used to cold soup I guess. The Gazpacho recipe looks good though, may have to give it a try. Thanks!
