Congratulations to Karen, our cookbook giveaway winner!

The lucky winner of our “Cooking Light” cookbook giveaway is Karen from Michigan, whose New Year’s resolution was this:

“I want to be more intentional in planning our menus to be healthier and more balanced. I spend too much time figuring out the main dish and neglect to plan enough veggie/fruit servings for the day.”

After Karen was randomly chosen from all of the folks who commented on our New Year’s resolutions blogs (click here…and here…to read them), we were curious….So how’s that working out for you, Karen?

“Entering the giveaway got me thinking about things that I needed to improve upon, particularly in the food/health area. I'm not one to make resolutions, but increasing our vegetable/fruit servings was an area that I really needed to address, particularly at this time of year when the produce tends to look pretty sad at the store.

I'm happy to report that there has been some change ..."resolving" helped me prioritize getting more veggies planned for our meals. I still have room for improvement but on our recent vacation, my daughters so enjoyed our lunches of raw veggies with hummus that they asked that we make it a tradition every year when we travel.

Also, when I asked my husband what veggies he'd like to have on our trip, he requested rutabaga ... a veggie I had completely forgotten that my family all enjoys eating raw.

So, thanks again for the giveaway. I'm thrilled to have won but also happy that the contest made me stop and think about improving this area.”

We so appreciate Karen for taking the time to share her story with us....and it has inspired us to shoot for more veggies, too. Never would have thought about raw rutabaga, but will definitely be adding that one to the list!
