Featured Recipe: Barbecued Lentil Stew
The next couple of weeks would be a good time to dust off your budget recipes and start saving a little money before the dollar-grabbing holiday season starts. Sometimes all it takes is a bit of a shift in your frame of reference -- start thinking “How can I do more with less?”
We're looking for as many good ideas as we can get to share with our readers here on Kitchen Scoop. The comments you post, (once per day), earns you an entry ticket to a drawing for the new Windows 7 Phone worth $500.

One of our favorite ways to do more with less is to put more meatless meals into the monthly menu rotation. We have a whole vegetarian category here on Kitchen Scoop, easily found by using the search filters in our virtual Recipe Box. Today’s recipe for Barbecued Lentil Stew is brand new, and just such a recipe that elevates the lowly lentil to new heights. We think you’ll like it as much as we do. It’s low-calorie, low-fat and full of tangy and sweet flavor.

I think that sentimental gifts are the most memorable way to do more with less. My favorite gifts are photo calendars, filled with memories. These are easy and affordable, and can be tailored for families and friends. Lastly, don't forget to spend a little something for those who can't spend - whether it is adopting a family for a holiday or buying something small for a toy drive. When I was little, I was the recipient of a secret toys-for-tots gift (I had no idea where it came from, it was left at my doorstep), and it helped me continue believing in Santa although my family was not able to afford gifts that year!

I can’t quite make it to the meatless variety of food (I abhor beans) but I’ve taken to making a lot of chili. It’s quick, easy, cheap and tastes good. Win all around.

Great ideas! I don't have time for cooking as I'm a working student, though in general I try to decorate my loft with as many every-day things as possible, such as used wooden palettes hanged on the wall (they look really lovely!) or small plants placed in cute cans as my tea cups were parceled in them.

I think you can do a lot a simple panini with asiago bread, pepperoni, and some tomato sauce.

With all of the birthday parties we are invited to between my 2 kids, we save a lot on making homemade birthday cards. It's fun for the kids to make something special for their friends and it so much more personal than a store-bought card. I also take some of my kids' larger pieces of artwork and recycle them as wrapping paper. It's cute, colorful, environmental and economical!

My father really like the low salt V-8 juice. He also likes soup and if it has tomato in it all the better. So I heated up some V-8, added some precooked tortilini, a bit of oregano and he was perfectly happy.

To save time on a busy night, pick up a rotisserie chicken at the market to make chicken tacos and use leftovers for stock.
