Black-eyed Pea Salad

If you are like me, we're gonna need more than pennies this year, but I'm not taking chances! This salad is a perfect way get your fill of peas which according to Southern food lore promises an abundance of pennies in the New Year.

Greens (any kind) will ensure your "greenback sucess" in the coming year. And cornbread and pork roast  or ham always round out my menu.
