Featured Recipe: Thai-Style Peanut Sauce
We're powerless in the presence of our Thai-Style Peanut Sauce! We've published the recipe in various versions in our three cookbooks, and the only criticism we've ever gotten concerns the long ingredient list.
While it is true that the recipe has a bunch of stuff in it, we can justify that. The array of ingredients is what gives this an incredible depth, plus the recipe makes a LOT of peanut sauce. The sauce can be refrigerated for a week or frozen for up to six months. (Freeze in small batches!)
Finally, this is a "Go-To" condiment....you can use it for dipping with grilled chicken or shrimp, you can thin it to make a salad dressing, and you can toss it with pasta and/or sauteed veggies.
We've been known to eat it plain -- right from the spoon!
