Featured Recipe: Small Crowd Steak and Black Bean Chili
When it's chilly outside, I crave a big bowl of chili. I have fond memories of cooking up a bubbling cauldron of my favorite chili and inviting friends over to watch a football game or have a game night with the neighborhood families. That was when my house was the place all the teens landed and when I was part of a couple and hung out with a bunch of other couples.
While memories are pictures of the past, there's no reason not to still enjoy those food moments, now, even if it's just me. Fact is, I know exactly what blend of beef and black beans I crave and it's not served at any restaurant. This recipe is a scaled down version of one of my signature dishes but all the flavor and all the spice is still there.
Melt-in-your mouth tender beef and black beans are the stars in this easy, slow-cooked chili. It makes enough for 3 hearty servings or freeze the leftovers for dinners down the road. Fancy it up with sour cream, cheese, scallions and chopped red pepper as garnishes. And don't forget the tortilla chips. Enjoy!
