Chicken Salad Salad for Two

I recently met a new friend from South Africa. As we were sitting down for lunch at one of my favorite pubs in downtown Wilmington, NC, she questioned various items on the menu. “What is Chicken Salad?’ she inquired. “Is it a salad with chicken or something else?” Since I’ve grown up with Old Fashioned Southern chicken salad with mayonnaise and lots of pickle, I immediately thought of the creamy sandwich spread of my childhood. But then I remembered all the delicious green salads with grilled, roasted, blackened or fried chicken served atop. OK, now I understood her confusion.
As I dove into the explanation of all the various dishes we call “chicken salad” in the US, I threw in at the very end, “Of course, you can always get chicken salad-salad!”
She ended up ordering a big juicy hamburger instead. Such is the meaning of information overload and lost in translation!
But that conversation made me think about one of my favorite dinner salads: a big leafy green salad with homemade chicken salad and lots of blueberries and tomatoes.
