Strawberry-Blueberry Parfait

Our newest favorite summer dessert could be called “Create Your Own Parfait” – and it’s really more method than recipe. Basically you assemble three or four layers in individual dessert dishes: Put cookie crumbs on the bottom, add fruit (or something sweet), pour on something creamy (like whipped cream), top with more fruit, and serve.

Here are some ideas:

• Pick the creamy layer first. Choices include pudding (almost any flavor), sweetened whipped cream, sweetened ricotta cheese, and mousse. Or mix whipped cream with cream cheese for a rich alternative. Add liqueurs or powdered coffee to whipped cream to give it pizzazz.

• For the crumb layer, crush your favorite cookies. Or crumble bits of leftover cake or brownies.

• If you don’t have fresh fruit, substitute frozen fruit, fruit pie filling, preserves or jam.

 

• Additional layers could include caramel or fudge sauce, chopped nuts or dried fruit.

Try mixing crushed pineapple and Cool Whip into the pudding. Very good on Angel Food cake too.
