Pumpkin Cobbler

If you’re a pumpkin pie fan then you’re gonna love this recipe. If you think you don’t like pumpkin pies, then you’ve got to taste this cobbler before you decide. Based on the easy, tried-and-true magic rising crust I have used with dozens of other cobbler recipes, this recipe is unbelievably easy to put together. An because it serves a good dozen people, it’s the perfect budget dish at Thanksgiving or any other time you need a reasonably priced, yet delectable dessert for a crowd.

Beverly wasn’t quite sure she was ready to switch from the traditional texture and flavors of her favorite Thanksgiving pie, but after just one bite, she was a believer. Now she’s in charge of bringing the cobbler for the big family meal, and everyone in her extended family now says it’s way better than pumpkin pie. (One uncle says it would be good topped with toasted pecans!)

So this Thanksgiving, step out of the rut and try something a little different with all the flavors of home cooked right in. If you try it, please report back as to whether you're now a believer, too!

Please make sure your baking powder is not expired! (Use by date is stamped on the bottom of the tin) If there is a way to screw this up, it is not having any "lift" (leavening) in the crust! Enjoy!
