Featured Recipe: Pumpkin Raisin Biscuits
I have a confession: I ate, by myself, five Pumpkin Raisin Biscuits in the course of an afternoon.
This is how it happened: I needed to make a batch of the biscuits to shoot a photograph so I could post it on the site. No problem, right? I keep the ingredients on hand through the fall for these delicious biscuits anyway, so into the kitchen I went, right at lunch time. My plan was to prepare the biscuits, and while they were baking, grab a bite for lunch and set up the shoot.
Biscuits went together in under 10 minutes and I popped them into the preheated oven.
But while they were baking, and the kitchen was filling with the savory aroma of pumpkin and spice, I couldn't pull myself away to prepare lunch. I sat there like a child watching the biscuits bake through the oven door window. Hot out of the oven, I quickly buttered one to just make sure they tasted as good as I remembered. Biscuit one. Then while buttering the biscuit for the shot, one broke in pieces and couldn't be used. No sense wasting that one, biscuit two.
Ten minute photo shoot and the prop goes straight into my mouth. Biscuit three. Skipping lunch, I turned to cleaning up the kitchen. Biscuit four and five disappeared in between dishes, typing in the recipe and loading the photo. Before the whole batch was gone, I packaged them and froze them for the future. Maybe tomorrow's lunch?

As long as we're confessing - this morning I made my favorite blueberry muffins as a coffeecake. The butter & cinnamon fragrance of the crumble topping began to waft through my house shortly before the timer buzzed. When the cake was done, I immediately cut a large piece (probably 1/8th). After enjoying that with a glass of milk & a few slices of crispy bacon, I returned to the kitchen to do the dishes & decided to take a few more bites of cake from the pan. When I went to cover the cooled cake an hour or so later, imagine my surprise when I saw that I'd eaten nearly half. Glad I live alone so no one will know. lol
