Featured Recipe: Magical Strawberry Muffins
I'm going on record. I'm getting up to watch the Royal Wedding on Friday. A friend of mine who is in news, said the networks may have over estimated the interest in the US in the Royal Wedding of Prince William and Kate Middleton Friday, April 29th. (Yes it is Kate with a K even though her name is Catherine with a C.)
I've been gearing up since I visited London in December. That's me in front of Westminster Abbey, and yes, I am singing. (Another story, I promise!) And even though I am risking all kinds of criticism, I'm not ashamed to say I'll be watching. So I'll be brewing my coffee and whipping up my Magical Strawberry Muffins to go along. Think of them as a sort of English Strawberries and Cream in a muffin. What better early morning way to celebrate the nuptials?
Coverage starts at 4:00 a.m., with the actual wedding several hours later. Check out ABC's entire page of all the 20 hours of coverage.

Ok, I admit it, I'm a HUGE royal watcher. I was "there" at 4 a.m. for Diana's wedding and I'll be there again on Friday. No tiara for me, though!
