Featured Recipe: Will's Sheet Cake
Here’s one of those recipes that has made it’s way around the recipe boxes and files for years, but is still a perennial favorite. I’ve heard it called everything from Butter Cream Cake to Ooey Gooey Butter Cake to Cream Cheese Blondies. But I think the reason it has always been a hit with me is because it is more like pie than cake with a nice “crust” on the bottom and a rich filling on top.
I’ve even seen one version that is technically a box cake fix-up. But I still love this version, pure scratch, but not difficult at all. This is the recipe I copied from a friend back in college and I have just recently come back across the recipe, stuck between the pages of my Complete Pelican Shakespeare.
Since there was no name at the top of the scribbled recipe, I get to make up my own name. In honor of it’s place of re-discovery, I’ll call it Will’s Sheet Cake. You can, of course, re-name it what you like. But do make it this holiday season. It’s perfect for sharing. Be sure to serve it with a sonnet and a cup of tea. Enjoy!
