Alicia's Chicken with Olives

8 ounces penne pasta
4 skinless, boneless chicken breast halves, (about 1 1/3 pounds total), fresh or frozen
1 tablespoon olive oil
Salt and black pepper to taste
1 teaspoon bottled minced garlic
1 1/2 teaspoons Italian seasoning
1 can (14 1/2 ounces) Italian-style stewed tomatoes
1/4 cup red or white wine
1 can (2 1/4 ounces) sliced black olives

Cook pasta according to package directions.

Meanwhile, if chicken is frozen, run under hot water so you can remove any packaging. Place chicken on a microwave-safe plate and microwave 3 minutes, uncovered, on high, to begin defrosting.

Cut chicken (fresh or partially defrosted) into 1 1/2-inch chunks. Heat oil in a 12-inch skillet over medium-high heat. Add chicken and salt and pepper it lightly. Cook, stirring occasionally, until chicken is lightly browned all over, about 6 to 8 minutes.*

Add garlic and Italian seasoning. Cook and stir for 30 seconds. Add tomatoes with juice and wine, then bring to a boil, uncovered, over high heat. Boil rapidly, stirring occasionally, until sauce is thick, about 5 minutes. Drain olives.

Meanwhile, when pasta is tender, drain and set aside. Add olives to skillet and stir.

Remove sauce from heat, toss sauce with drained pasta and serve, arranging chicken pieces on top.

This was my first Desperation Dinner. I discovered it long before I ever became a desperate cook when our friends, Alicia and Frank Casadonte, prepared it for a house full of people at the beach one summer.

I brought the recipe home, changed a few things, and it fast became a favorite standby. It's one of the few of my "old life" recipes that I still have time to make.
