Apple Cinnamon Slump

4 medium Granny Smith apples for about 6 cups of slices
Juice from ½ lemon
1 cup brown sugar, packed
¼ cup cornstarch
1 teaspoon apple pie spice
½ teaspoon salt
2 cups water
1 (12.4-ounce) package reduced fat refrigerated cinnamon rolls

1. Preheat oven to 375 degrees.
2. Peel, core and chop apples into cubes and place in a bowl. Add lemon juice and toss to coat. Set aside.
3. In a Dutch oven (or other stove-to-oven dish) heat the sugar, cornstarch, spice, salt and water together over medium high heat until it boils. Boil for 2 minutes stirring constantly. Add apples and cover. Reduce heat to medium low and simmer for 5 minutes or until apples are tender.
4. Uncover and top with cinnamon rolls, spaced evenly. Carefully place in preheated oven and bake for 15-18 minutes or until rolls are golden brown. Remove from the oven and drizzle with icing from rolls package (optional). Serve immediately.
