Asian-Style Cucumber Salad

Asian-Style Cucumber Salad

 

2 cups peeled and thinly sliced Kirby or pickling cucumbers
1 small fresh tomato, seeded and finely chopped
1/4 cup thinly sliced purple onion
1/4 cup rice vinegar
1 teaspoon toasted sesame oil
1 tablespoon granulated sugar
1 teaspoon fresh crushed ginger
1/2 teaspoon salt
1/8 teaspoon red pepper flakes, or more to taste

1. In a medium bowl, combine the vegetables. In small bowl combine the vinegar, oil, sugar, ginger salt and pepper.
2. Add the dressing to the fresh veggies and toss to coat well.  Serve immediately or refrigerate for up to 8 hours until ready to serve.
