Baked Sweet Potatoes

1 to 10 medium sweet potatoes (depending on how many you wish to serve)

1. Preheat oven to 400 F degrees.

2. Wash and dry potatoes well. Prick each potato with a sharp knife or fork several times. Place on a baking sheet lined with foil. Bake on the middle rack for one hour. Remove and test for done-ness by piercing with a sharp knife. Potato should be tender all the way through.

3. Cool for 5 minutes and serve or cool completely for future use. Cool to handling temperature to proceed with recipe or refrigerate (peeled or unpeeled) for up to 3 days before proceeding with preparing casserole. Baked and peeled sweet potatoes may also be frozen for up to a month ahead. Thaw in the refrigerator before beginning any recipe.

When I bake sweet potatoes I can barely get them peeled because I want to eat all of the caramely goodness of the dark spots where they sat on the pan. Butter and salt & are all that's needed. Have you tried cooking beets the same way & serving with sour cream like baked potatoes? Saw it on The Chew and they looked delicious.

No, I've never tried roasted beets this way...going to have to try it for sure...yum!
