SERVES 6 - START TO FINISH: 20 minutes
Cooking Notes
Country Dijon mustard is course ground Dijon style mustard. Grainy brown mustard or regular Dijon can also be used.
Bowtie Pasta Salad with Chicken, Grapes and Peas
1 box (12 ounces) bowtie-shaped pasta
1 cup light mayonnaise
1 tablespoon “country” Dijon mustard*
1/2 teaspoon celery salt
1/2 teaspoon ground black pepper
2 cups cooked or poached chicken cubes, (about 6 ounces)
1/2 cup thinly sliced celery
1 cup frozen green peas, rinsed under cool water and drained
1 cup red grapes, sliced in half
Cook pasta according to package directions.
While pasta cooks, in a large mixing bowl, whisk together mayonnaise, mustard, celery salt, and black pepper. Add chicken, celery, peas, and grapes. When pasta is done, drain and rinse under cool water. Shake colander to remove as much water as possible. Add to bowl and mix until all ingredients are well coated with sauce. Taste and adjust seasoning according to personal preference.
Serve immediately or refrigerate until ready to serve, up to 2 days. (After refrigerating, you may need to add a tablespoon or two more mayonnaise, as pasta tends to soak up sauce.)
