Chica's Cheese Crisps

1 stick butter, at room temperature
1 cup finely shredded extra sharp cheddar cheese
1 cup all purpose flour
1/8 teaspoon cayenne pepper
1/2 teaspoon salt
1 cup Rice Krispies ® cereal

1. Preheat the oven to 350 degrees.

2. In a medium mixing bowl, mix together the butter, cheese, flour, cayenne and salt until it forms a lightly stuck together ball. (There should be no individual ingredients in the bottom of the bowl. You may use your hands or a wooden spoon. )

3. Gently fold the rice cereal into the dough. Pinch off nickel-sized balls and roll tightly between your hands. Place on an ungreased cookie or baking sheet about an inch apart. When all the balls are rolled, flatten each ball with the tines of a fork. Bake for 15 minutes.

4. Cool crisps for 5 to 10 minutes before removing from the pan and serve. Leftovers may be stored in a tin for up to 1 week.

Chica's Cheese Crisps

Cheese straws, cheese crackers, cheese wafers - whatever you call them- have been a part of my culinary history for as long as I can remember. Surprisingly, I have run into quite a few folks who have never tasted a cheese straw. Maybe they are new to you as well, but you are sure to adore them, just as I do. Cheese straws are as simple as a few ingredients, but there is an art to making them that has eluded many a baker, including me. I’ve tried over the years at least 100 techniques, recipes, styles, even shapes and sizes, but could never duplicate that cheesy, crisp cracker I remember from childhood.
I had all but given up when my friend, Chica, (aka Kathy Starkey) brought her Cheese Crisps to a party. Oh my goodness, finally that old fashioned flair I had missed. The light, perfectly balanced cheese, butter and flour combination I remember from my great aunts and grandmother. Could it be possible I could make Chica’s Cheese Crisps?
She jotted down the recipe on a grocery list pad for those of us who wanted the 411 and I took a picture with my phone and sent it to myself. (BTW, that’s a terrific way to share a recipe really quickly!) But I still didn’t try them for at least six months. It’s amazing what past kitchen failure will do to your confidence. However, finding myself with the ingredients on hand I couldn’t resist. I am here to tell you they are the easiest, most flexible cheese straw/crisps I have ever made. No strange kneading technique, no special equipment, easy to keep on hand ingredients - all in under 30 minutes.
