Chopped Margherita Salad
Salads, Mains | 30 Minutes or Less, Cooking for One or Two | Vegetables
SERVES 1* - START TO FINISH: 10 minutes
Cooking Notes
Salad can easily be doubled, tripled or more. If you are serving several people it’s easier to chop individual ingredients and place into bowl than to chop entire salad on a cutting board.
Use our recipe for Simple Balsamic Vinaigrette or one premade from the supermarket.
Chopped Margherita Salad
1 cup romaine lettuce, torn in bite-size pieces
1/4 cup sliced fresh mozzarella cheese
1/2 cup sliced grape tomatoes
2 fresh basil leaves
2 tablespoons balsamic vinaigrette*
Combine lettuce, cheese, tomatoes and basil in a medium bowl. Turn ingredients onto a large chopping board and using a sharp chef’s knife, chop salad well. Return to bowl, drizzle dressing over and toss well. Serve immediately.
