* If you can’t find Italian seasoning use instead, 1/2 teaspoon dried oregano, 1/4 teaspoon each of dried rosemary and sage.

Chopped Mushroom Wrap

2 teaspoons extra virgin olive oil
1 cup chopped button mushrooms
1/2 cup chopped bell pepper (any color)
1/4 cup chopped onion
1 teaspoon Italian seasoning*
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1 (12-inch) sandwich wrap or whole wheat flour tortilla
1/2 cup baby field greens
1/4 cup chopped tomato
Italian dressing, optional condiment

1. Heat oil in large skillet over medium heat, add mushrooms, onion and peppers and sauté for 3 minutes or until mushrooms release their liquid. Add Italian seasoning, salt and pepper and mix well. Remove from heat.


2. Place tortilla on a plate and pile the lettuce and tomato in the center. Add sautéed vegetables and wrap tightly, tucking in edges if possible. Cut in half and serve immediate with Italian dressing, if desired.
