Classic Iceberg Wedges with Blue Cheese Dressing

This is an old-fashioned recipe that's made a comeback at steakhouses around the country. For good reason, we say!
Recipe
1 head iceberg lettuce
½ cup Blue Cheese Dressing*
Remove and discard the core of lettuce. Rinse lettuce, drain well and dry with paper towels. Cut lettuce head in half through core end. Cut each half into 2 wedges. (You should end up with 4 wedges.)
Place each lettuce wedge on a salad plate. Spoon about 2 tablespoons dressing over each wedge, or to taste. Serve at once or let stand until ready to serve, up to 30 minutes.
