I love cheese, so I always add some ground Parmesan and/or Romano cheese to my sauces (it helps to thicken it too). Then I add a healthy pinch of sugar and a teaspoon red wine vinegar for every 24 ounces of sauce. But this is a simple recipe and extra flavors aren't for everyone.
