Easiest Vegetable Beef Soup

Soup base:
1/2 pound extra lean ground beef
1/2 cup chopped onion
1/2 cup chopped carrots
1/2 cup chopped celery
1 (14 ounce) can chopped tomatoes with juice
3 tablespoons tomato paste
2 cups vegetable or chicken broth
1 teaspoon granulated sugar
1/2 teaspoon ground black pepper
optional additions:
1 cup frozen chopped spinach
1 cup frozen mixed vegetables
1/2 cup chopped carrots
salt to taste

1. To make the soup base, combine the beef with onion, fresh carrots and celery and cook over medium heat until cooked through and well crumbled. When crumbled and cooked through, add the tomatoes with juice, paste and broth of choice.
2. Season with pepper and sugar. Reduce heat to low and stir in other additions as desired. Simmer until heated through and ready to serve.
