Cooking Notes

For testing, we used Applegate Farms Uncured Turkey Bacon, and each thick slice is 1 ounce. Other brands can be used, but the slices may be thinner and cook faster. Bacon made from pork also could be used.

Heirloom tomatoes usually are available in supermarkets and specialty groceries. Any variety of very ripe tomatoes can be used.

If your skillet is not large enough to hold all of the bacon without overlapping slices, cook it in batches.

The size of this recipe is flexible, and you can make 1 sandwich at a time or as many as you need. Any extra turkey bacon can be refrigerated in a zipper-top bag for 3 days or frozen for up to 1 month.

Five-Grain Turkey BLT’s with Heirlooms and Arugula

1 teaspoon vegetable oil
8 slices (8 ounces) thick-sliced turkey bacon*
8 slices (4 ounces) five-grain loaf bread
4 thick slices very ripe heirloom tomato*
4 teaspoons reduced-fat mayonnaise
4 ounces prewashed arugula leaves, or to taste
Salt and pepper to taste

Heat oil in a large (preferably 14-inch*) nonstick skillet over medium-high heat. Arrange bacon in skillet and cook until very crisp on both sides, about 10 to 15 minutes, depending on bacon’s thickness. Turn frequently and remove to a plate lined with paper towels when done. (If bacon sticks to the skillet, use a spatula to loosen it from pan and add more oil if necessary.)

While bacon cooks, lightly toast bread slices in a toaster or toaster oven and then set aside. Cut tomato slices (unpeeled) and set aside.

Assemble the sandwiches: When bread is toasted, lightly spread each slice with 1/2 teaspoon mayonnaise. Place a tomato slice and arugula leaves on one side of 4 of the bread slices. Lightly salt and pepper to taste.

Place 2 crisp bacon slices on the other 4 bread slices, cutting bacon slices as necessary to fit. Put sandwich sides together, cut sandwiches in half if desired, and serve.

Can someone help me locate any retailer in Toledo, OH/Lucas County or Wood County Ohio that sells the Applegate Farms Turkey Bacon. The BLT recipe sounds great but regular baconis not a healthy option for me. Thanks
