Fresh Egg Scramble with Ham and Cheese

1 tablespoon extra-virgin olive oil
1 clove fresh garlic
1 small shallot or 1/4 small white onion
1/4 cup chopped ham
1/4 cup shredded cheese of choice, such as white cheddar
3 large eggs
Salt and pepper to taste

1. Heat oil over medium heat in an 8-inch or larger skillet. Peel and thinly slice garlic and shallot, and add to pan. Cook for 1 minute or just translucent. 2. Meanwhile, in a small bowl, lightly whisk egg and stir in ham and cheese. Add to pan and lightly scramble for 1 to 2 minutes, or until eggs are softly cooked. Remove from heat and let stand for 30 seconds. Season with salt and pepper or pass at the table.

I'm more inclined to have dinner for breakfast than the other way around, LOL, but when I do the breakfast supper thing, it's usually some version of cereal 'cause I'm just too tired to cook anything! Scrambled eggs, however, are pretty good just about anytime, aren't they, and yours look delicious! Thanks for this lovely blog, Alicia! I'm really appreciating your simple, yet elegant recipes and the beautiful photos which make everything look so tempting! Wasn't aware of your column; just stumbled here while looking for pumpkin cobbler. It's interesting, tho', how there are some whose taste you just know you can trust immediately, and you ladies have certainly impressed me that way. So thank you again; I will be visiting often!
