Great Grilled Chicken Kebabs

Serves 8

Preparation Time: 10 minutes prep, plus at least 15 minutes to marinate plus 6 to 10 minutes to grill

Great Grilled Chicken Kebabs

Here's the recipe Alicia grilled in the middle of Times Square live on Good Morning America one July Fourth.

Recipe

1/4 cup vegetable oil
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon salt
1/2 teaspoon black pepper
2 2/3 pounds boneless skinless chicken breast halves (1/3 pound per person)
16 to 24 (10-inch) bamboo skewers, soaked

In a small bowl mix together oil, garlic powder, onion powder, salt and black pepper. Set aside.

Cut chicken into 1-inch cubes. Thread 4 to 5 pieces on each skewer. Place skewers in a shallow oblong dish in a layer no more than 2 deep. Pour marinade over them. Cover and refrigerate at least 15 minutes or up to 8 hours.

When you’re ready to grill, turn on a gas grill to medium-high.

Place skewers on uncovered hot grill and grill for 6 to 10 minutes, turning frequently. Serve immediately.

Backstory

These Kebabs would be terrific with most any dipping sauce, such as our Thai-Style Peanut Sauce or Golden Mustard Glaze. Even your favorite bottled barbecue sauce will do in a pinch.
