Grilled Pimento Cheese Sandwich on Sour Dough with Fresh Sliced Tomato

8 medium slices of sourdough bread
1½ cups sharp shredded cheddar cheese
½ cup light or regular mayonnaise
4 dashes Tabasco, or more to taste
1 tablespoon chopped pimentos, drained
1 tablespoon milk or half and half
Salt to taste
1 large vine-ripened tomato, sliced
Butter for griddle

1. In the bowl of a food processor add the cheese, pimentos, half and half, mayonnaise and Tabasco. Process for 30 seconds, scrape down bowl, and repeat process until smooth. Adjust with salt to taste.
2. Assemble sandwiches using ¼ cup pimento cheese and one slice of tomato.
3. On buttered griddle, grill sandwiches 2-3 minutes on each side or until golden brown.
