Guinness Stewed Beef

3 1/4 to 3 1/2 pounds well-marbled beef, cut for stew
1 can (14 ounces) stewed tomatoes, with juice
12 ounces Guinness Stout
2  1/4 cup cups water, divided use
4 large cloves garlic
1 large onion, coarsely chopped

1/4 cup cornstarch

1. Place all ingredients (except 1/4 cup water and cornstarch) in the bowl of a slow cooker. Stir and cover. Cook for 8 to 10 hours on low setting.
2. When beef is fork tender, turn off heat. Mix together the cornstarch and remaining 1/4 cup water. Drizzle over beef and stir to thickenandbreak up the beef. shred with two forks if necessary.  Serve, or cool to store. Beef may be refrigerated for up to 4 days or frozen (in 1-cup increments) for up to 3 months.
