Iceberg Wedge Salad All the Way

We only indulge in the classic iceberg wedge salad at a “nice” steakhouse. But how easy is that salad? If served it with bacon, tomatoes and hard cooked egg, it morphs into dinner.
Recipe
Blue Cheese Dressing*
8 thick slices already-cooked bacon
1 head iceberg lettuce
1/2 cup chopped tomato
2 hard cooked eggs, chopped*
Blue cheese crumbles, optional garnish
Prepare Blue Cheese Dressing, if using homemade.
Crisp bacon in the microwave according to package directions. Coarsely chop and set aside.
Quarter (and core) lettuce and place each wedge on a plate. Top each with dressing, tomatoes and chopped egg. Garnish with cheese crumbles, if desired. Serve immediately.
* Notes
Purchased dressing can be used.

I’ve chuckled many times since I’ve read about the “new” salad - a wedge of lettuce. Mom served this frequently 60+ years ago, but always on Sunday when we had the traditional big meal. I served it to my new husband shortly after our wedding and he wasn’t quite sure how to react as his Mom (an outstanding cook) had never done that. But he enjoyed, and we continued to like a salad like that for many years. Thanks for a new way and I’ll be trying it soon.
I agree Carol, Iceberg lettuce was all my salads were growing up. So it is a little amusing the the “in” salad is actually what our moms served years ago. Food is often like fashion and makes it’s way back around.
