Cooking Notes
Choose pencil-thin asparagus, if possible, to avoid any urge you may have to peel them.
Julie's Best Baked Asparagus
2 pounds fresh asparagus*
4 tablespoons butter
Salt and black pepper to taste
1. Preheat the oven to 450 degrees F.
2. Rinse and drain the asparagus, then snap off the tough ends where they break naturally. Arrange the spears in a 13x9-inch glass baking dish.
3. Place the butter in a 2-cup glass measure and microwave uncovered, on high, for 45 seconds, or until melted. Drizzle the butter over the spears. Season with salt and pepper. Cover the dish snugly with aluminum foil. Bake for 15 minutes, or until crisp-tender. Serve immediately.
Julie's Best Baked Asparagus
So simple, and yet the perfect way to serve guests the unique fresh flavor of asparagus in season. We’ve had rave reviews on the recipe since it first appeared in a smaller quantity in our first book, Desperation Dinners! This larger version is just as easy, though, and you’ll love this way of cooking large quantities of asparagus. Our thanks go to Julie Realon for sharing this great recipe!

This is sooo easy to make and my favorite way to cook asparagus (just don't leave it in the oven too long!). I've substituted butter for olive oil on occasion. Maybe for those health conscious folks out there!
