Mom's Original Meatloaf Recipe

Mom's Original Meatloaf Recipe

2 slices hearty wheat bread, cubed and toasted
1/2 cup whole milk
2 eggs, gently beaten
1 large onion (1 cup chopped)
1/2 cup Parmesan cheese
3 tablespoons fresh parsley, chopped fine
1 tablespoon Dijon Mustard or prepared mustard
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 pounds ground beef or 1/2 pound each of ground beef, pork and lamb
ketchup or chili for topping

Preheat oven to 325 degrees.

In a large bowl place bread crumbs, milk and egg. Stir well and set aside. Finely chop the onion, adding it to the bowl as you chop. Add the Parmesan cheese, parsley, mustard, Worcestershire sauce, salt and pepper. Mix well.

Crumble ground meat over the mixture and then fold together using your hands.

Transfer into a 8x11x2 glass baking dish (sprayed with cooking oil spray) and form into a long loaf. Pat down to about 3 inches high. Pour ketchup or homemade chili (see below) to taste over entire loaf.

Bake for 1 hour and 15 minutes or until done to personal preference.

Homemade Chili Sauce - Mom would brown up about 1/4 pound of ground beef and season it well with salt and pepper. When properly browned, she would add ketchup, chili powder, garlic powder and a touch of cayenne pepper to taste. Cover, reduce heat to simmer and cook for 15 minutes.
