Mountain Apple Compote

Mountain Apple Compote
2 cups water
1/3 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
Pinch salt
5 cups peeled cored and sliced firm apples, such as Braeburn or any sweet-tart apple
Places all ingredients in a medium saucepan over medium high heat. Stirring occasionally, cook until apples are tender and sauce has thickened, about 20 minutes.
