For a more traditional frozen daiquiri, double the first 4 ingredients, add a handful of ice cubes and blend well. This will serve 2.
If you can't find extra-fine granulated sugar, you can use regular granulated white sugar. It’s sometimes called “super-fine sugar.”
Peachy Peach Daiquiris
1 to 2 ounces light rum, to personal preference
2 tablespoons peach schnapps
2 tablespoons fresh lime juice
2 tablespoons extra-fine granulated sugar*
1 frozen peach, peeled and pitted (or 12 frozen peach slices)*
Combine all ingredients in a blender and puree until smooth. Serve in a wine glass rimmed in sugar, if desired.
