Penne with Sweet Italian Sausage Sauce

12 ounces penne pasta
1 teaspoon olive oil
1 pound sweet Italian sausage, casings removed
1 cup chopped onion
2 cups sliced fresh mushrooms
1 teaspoon minced fresh garlic
1 (28 ounce) can crushed tomatoes
Fresh grated Parmesan cheese to taste
Salt and black pepper to taste

 

1. Cook pasta according to package directions. Meanwhile, in a large Dutch oven or heavy bottomed soup pot, heat oil over medium-high heat. Add sausage, onions and mushrooms and cook until sausage is cooked through and crumbled, about 4 to 5 minutes. Drain excess fat if necessary.

2. Reduce heat to low and stir in garlic and tomatoes. Simmer for 10 minutes. Season with salt and pepper to taste. Drain pasta well and add to the sauce. Toss until pasta is well coated.
3. Serve in shallow pasta bowls and sprinkle with Parmesan cheese to taste.
