Rich Caramel Sauce

Makes about 1 2/3 cups

Rich Caramel Sauce

Just about anything you pour caramel sauce over is vastly better for it. It may only have five ingredients, but this easy caramel sauce tastes like a gourmet delight.

Recipe

8 tablespoons (1 stick) unsalted butter
1 cup light brown sugar, lightly packed
1/2 cup heavy or whipping cream
2 tablespoons light corn syrup
1 teaspoon vanilla extract

Cut butter into 4 pieces, and place it in a 4-cup glass measure. Add brown sugar, cream, and corn syrup. Stir to mix. Microwave on high until mixture boils, about 3 to 4 minutes. Remove from microwave, uncover, and stir well. Stir in vanilla.

Let mixture cool. Serve warm or at room temperature.

* Notes

The sauce can be refrigerated, covered, for up to 1 week. Reheat in the microwave, uncovered on high, until warmed through, about 1 minute.

Hannah made this sauce for the umpteenth time tonight for some of our friends and they all raved! Served it with a baked whole wheat churros and vanilla ice cream…yum!
