Roasted Garlic: Here's How!

Fresh garlic cloves, any amount
Olive oil

Preheat the oven to 375 degrees F.

Do not peel garlic. Cut about 1/4 inch from the top of each clove. (If garlic is still attached in the bulb, just leave it attached, and cut across top portion of entire bulb.) Place cloves on a sheet of foil. Drizzle a small amount of olive oil over cloves. (The exact amount doesn’t matter, but count on about 1/2 teaspoon for the first clove and 1/4 teaspoon per each additional clove.) Wrap foil around cloves, and seal it to make a package. Shake package to distribute olive oil.

Place foil package seam side up in a baking dish, and bake until garlic cloves are soft, about 30 minutes. (You can test the clove by pressing a toothpick directly through the foil.) Remove garlic from oven, and cool to room temperature before opening package. To use garlic, squeeze it from the skins. Store cloves in a zipper-top plastic bag or other airtight container in the refrigerator for up to 2 weeks.
