Spicy Black Bean Cakes

Spicy Black Bean Cakes

2 (15 ounce) cans black beans, drained
1/2 cup already prepared salsa
1/4 cup dice onion
1 cup diced bell pepper
1/4 cup chopped fresh cilantro, optional
6 tablespoons plain bread crumbs, more or less
1/2 teaspoon Tabasco sauce, or more to taste
2 cups crushed tortilla chips
1/2 teaspoon cumin
1/8 teaspoon cayenne pepper
2 tablespoons olive oil
Salad or bun for serving

1. Rinse black beans in cold water. Place in a colander and drain well.
2. Add all ingredients except bread crumbs, tortilla chips, cumin, cayenne pepper and olive oil to a mixing bowl. Using your hands, mix well, mashing some of the beans to form a thick mixture. Add the bread crumbs a tablespoon at a time until you can form mixture into 4 patties, pressing well and set aside. (You don’t want the mixture too stiff or too loose, but the consistency of a beef burger, soft, but together.)
3. Using a food processor, blend tortilla chips, cumin, and coriander until it is a crumb consistency. Gently press each bean patty in the tortilla mixture on both sides.
4. Heat oil in large skillet and sauté bean cakes over medium-high heat, turning when they are golden brown. Serve over salad greens or on a bun with choice of condiments.
