Super-Easy Cinnamon Twirl Biscuits

Super-Easy Cinnamon Twirl Biscuits
2 ¼ cup biscuit mix, such as Bisquick ®
2/3 cup low fat milk
3 teaspoons granulated sugar, divided use
1 teaspoon ground cinnamon
all purpose flour for rolling dough
icing:
1 cup powdered sugar
3 tablespoons low fat milk
1 teaspoon vanilla extract
1. Preheat oven to 450 degrees. Line a baking sheet with parchment paper and set aside.
2. In medium bowl, gently mix together the baking mix and milk just until a soft ball of dough forms.
3. Generously flour a smooth surface (such as your counter-top) and turn the dough out onto the floured surface. With floured fingers, gently pat the dough down and sprinkle with 1 teaspoon of sugar. Using a floured rolling pin, roll the dough to about a ½-inch thickness.
4. Combine the remaining sugar and cinnamon in a small bowl and sprinkle over the dough, covering the entire surface. Carefully begin rolling the dough from one end to the other, forming a log. Flour fingers as needed to keep dough from sticking. Cut the log into 8 (1-inch thick) slices and place swirl-side up on the prepared baking pan. Bake for 10 to 12 minutes until lightly browned.
5. While the biscuits are baking, mix together ingredients for icing together in a small bowl. Set aside until ready to use. Remove biscuits immediately and drizzle with icing. Serve hot.

Whenever I bake anything with yeast, I usually manage to kill it - can't get the hang of proofing at the right temp. So I usually stick to quick breads. My mom made heavenly cinnamon rolls & dinner rolls but I didn't get that gene. I'm going to make these rolls for the gang at work soon.

We made these tonight after dinner (the whole family Mom, Dad, 10 year old and a 7 year old). It was a fun and easy family "project". We divided into two "teams"; the team with my youngest made the icing, mixed the cinnamon sugar and cut the dough once it was rolled. Thumbs up!

I wanted to take the time to say that your cookbook has been the best addition to my kitchen! I'm not a great cook and my youngest son is an extremely picky eater which makes cooking frustrating, but I've found several recipes that he likes & I enjoy making.
