Will's Sheet Cake

2 cups flour
1 cup granulated sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup butter, softened
3 eggs, divided use
8 ounces cream cheese
3 and 1/4 cups powdered sugar, sifted
2 teaspoons vanilla extract

1. Preheat oven to 350 degrees. Butter and flour a 9x13 inch baking pan and set aside.

2. Using an electric mixer, blend the flour, sugar, baking powder, salt, butter and 1 (one) egg together on low speed until it resembles coarse meal. Press mixture into prepared pan.

3. In another bowl of electric mixer, beat the cream cheese, powdered sugar and the remaining 2 (two) eggs for 3 minutes, or until light and fluffy. Pour over the cake mixture in the pan.

4. Bake for 35 to 40 minutes or until golden brown along the edges.

5. Cool at least 30 minutes before slicing and serving.

Will's Sheet Cake

This is the recipe I copied from a friend back in college and I have just recently come back across the recipe, stuck between the pages of my Complete Pelican Shakespeare.

Since there was no name at the top of the scribbled recipe, I get to make up my own name. In honor of it’s place of re-discovery, I’ll call it Will’s Sheet Cake. You can, of course, re-name it what you like. But do make it this holiday season. It’s perfect for sharing. Be sure to serve it with a sonnet and a cup of tea. Enjoy!
